Coffee expert and roaster Matthew Algie’s Gosia Rzeniewicz has shared a simple yet effective trick to significantly improve the taste of your instant coffee, and the best part is—it only takes a few seconds.
Cold Water First?
Rzeniewicz explains, “You don’t need expensive equipment, advanced techniques, or specialized knowledge to make your coffee taste better at home. A few simple tips can drastically change the flavor.” Her easiest tip? Start with cold water.
“It may sound counterintuitive, but mixing your instant coffee with a small amount of cold water before adding hot water allows the granules to dissolve completely, enhancing the flavor,” says Rzeniewicz. This simple step improves the taste and smoothness of your coffee, making it more enjoyable.

Fresh Beans Are Key
Freshness has a major impact on coffee flavor. Once you open a bag of coffee, it starts losing its aroma within a few weeks—ground coffee even faster. To enjoy the best flavor, use your beans quickly and ensure they’re stored in an airtight container.
Grind to the Right Size
If you grind your beans at home, choose the right grinder for your needs. For espresso, grind the beans finely; for drip coffee, go for a medium grind; and for French press, a coarse grind works best.
Temperature Matters
Water temperature is one of the most crucial yet often overlooked aspects of coffee brewing. The ideal temperature is between 90–96°C (194–205°F). Heating your mug with hot water before pouring in your coffee is also a smart trick, as it helps maintain the temperature and flavor of your brew for longer. A cold cup can lower the coffee’s temperature, affecting its taste.
